Chilli is the dried ripe fruit of the genus Capsicum. Capsicum annuum is an annual sub –shrub, the flowers of which are borne singly and fruits usually pendent, which provide red peppers, cayenne, paprika and chillies and sweet pepper (bell pepper) a mild form with large inflated fruits.

India is the greatest consumer and largest producer of Chilli in the world. The major producing states in India are Andhra Pradesh (46%), Karnataka (15%), followed by, Orissa, Maharashtra, Rajasthan, Tamil Nadu, West Bengal and Gujarat. Around 90% of India’s production is consumed within the country. India exports around 80000 – 100000 tons of chillies a year. India exports chillies in the form of dried chillies, Chilli powder, picked chillies and Chilli oleoresin. Indian Chilli is mainly exported to Sri Lanka, USA, Canada, UK, Germany, Bangladesh, the Central Asia and the Far East.

South America is reported to be a native of Chilly and is widely dispenser in all tropical and sub tropical countries including India. It was first introduced in India by Portuguese towards the end of 15th Century. Now it is grown all over the world except in colder parts.

Grading
  • Highly pungent “Sannam” and mildly pungent “mundu” (dried red chilli) are popular varieties.
  • “Gospurea chilli” with or without stalks and with clipped stalks
  • “Byadgi” (grown in Dharwad district of Karnataka) and “Warangal” (grown in Warangal district of Andhra Pradesh) varieties are paprika alike chillies with less pungency and high colour.
